Moving-In Casserole


  • 1 lb hamburger
  • small (about 14 oz) can of cut-up tomatoes (sliced, diced, whatever)
  • 1.5 c (frozen) green beans*
  • 2 cups quick-cooking brown rice (I used Uncle Ben’s ten minute rice)
  • some Italian herb seasoning
  • 1 c shredded cheese (cheddar, Mexican 4-cheese, or the like)
  • optionally, garlic and/or onion

Oven around 375 degrees F.

Brown the hamburger with the Italian herb seasoning, or some other herbs to make it smell good.  Saute with some onion or garlic if you have some around and like the taste.  Mix in the green beans and tomatoes (with juice).

Put the brown rice in the bottom of the casserole dish.  (I used a round one that was fairly deep.  Maybe 2 quarts??)  Pour the hamburger/beans/tomatoes gamish on top.  Pour in some water in case the tomato liquid isn’t enough.  (Maybe a cup of water?  I swish out the rest of the tomato leavings in the tomato can.)  Cover.  (Aluminum foil is fine if your casserole doesn’t have a lid.) 

Bake a while and go unpack a box, or two if things are quiet, while your mom reads to the Little One.  (I think I left it in the oven for 1/2 hour — you want the rice to soak up the liquid and the vegetables to warm up.)  Remove the cover and put shredded cheese on top.  Either put it back in the oven to melt the cheese or let it melt on its own if you’re afraid you’ll forget to get it out once the table is set.

Serve.  You don’t really need anything else because it has protein, vegetables, and a starch.  You can serve some dinner rolls or sliced bread if you want, but you don’t have to.  Especially if it’s your first time cooking in a new kitchen and you didn’t buy any bread.

* Just to be clear, 1.5 c = one and a half cups.  Not fifteen cups.  Need not be that precise — you just want some green beans in there.
